This Nakiri (literally “knife for cutting greens”) is made from our own hand-forged Damascus Steel. It is a Japanese kitchen knife with a thin blade for cutting vegetables without pushing or pulling.
The Damascus steel is made from 1075 / 15N20 in a dramatic low layer pattern
The thin, straight blade cuts all the way to the cutting board in one vertical motion without breaking ingredients. The knife has a V grind ,creating a fine surface on cut ingredients.
The handle is made from a beautifully figured piece of Tasmanian Blackwood. The guard is made from Wenge with brass and G10 spacers
